Budget Vegetable Pasta Bake

1kg dried pasta

1 large onion, chopped

2 cups chopped vegetables (mushrooms, zucchini, capsicum, peas, corn or what ever else you have handy)

2 cloves garlic, chopped

400g can tomatoes

1 cup grated cheese

Pinch of mixed herbs

Salt and pepper to

Cook pasta in boiling water. When cooked, drain and place in an oven proof dish.

Steam or microwave the vegetables for a few minutes.

Add the chopped tomato and stir.

Add a little salt and pepper if it's necessary.

Pour the vegetables over the pasta and gently mix well.

If the pasta mix is a little stiff, loosen by adding a little water.

Sprinkle the grated cheese over the top and place in a moderate oven for 15 to 20 mins and serve.

You can either serve this dish stiff, similar to a Lasagne or loose and saucy like a pasta Bolognaise.

Easy Vegetable Lasagne

.

3 cups Spaghetti Sauce

2 medium zucchinis, shredded

l medium carrot, shredded

1 medium eggplant, sliced

1 onion, finely chopped

1 clove garlic, minced

6 lasagna noodles (uncooked)

l cup cottage cheese

l/4 cup parmesan cheese, grated

l teasp dried oregano

2 cups mozzarello cheese, shredded

Mix spaghetti sauce, raw zucchini and carrots, onion and garlic.

Spread 1 cup of mixture in bottom of baking dish. Top with 3 uncooked noodles.

Mix cottage cheese with parmesan and oregano and spread over noodles.

Spread l cup sauce mixture on top.

Top with remaining noodles, then remaining sauce and mozzarella.

Bake uncovered in a moderate oven for 45 minutes.

Easy Potato Bake

.

4 large potatoes

4 bacon rashers

1 onion

1 clove of garlic

1 cup grated cheese

.

Peel and slice the potatoes. Place in a microwave safe bowl and microwave for 5 minutes,

Dice the bacon, onion and garlic. Mix together in a bowl with of the grated cheese.

Lay half the sliced potatoes in a baking dish lined with foil (make sure you use enough foil so that you can cover the top to bake)

Place half the bacon, onion and cheese mixture over the potatoes then layer the remaining potatoes and then bacon mixture on top.

Cover with foil and bake in a moderate oven for 20 minutes.

Take it out of the oven, remove the foil lid and add the remaining grated cheese.

Leave the foil off and return to the oven for a further 15 minutes.
