Pie 500g
beef mince
1 onion, diced
1 cup diced carrots
1 cup frozen peas
1 cup frozen corn
1 tablespoon corn flour
1 tablespoon Worcestershire sauce
1/2 cup water
1 can of condensed tomato soup
Salt and pepper, to taste
1 kilo (2 and 1/4 pounds) potatoes
2 tablespoons milk
1 cup grated cheese

Fry the
mince, onions and carrots together until the
mince is browned. Add peas and corn. Cook a
further 5 to 10 minutes or unitl the vegetables
are soft.
Meanwhile
peel and dice the potatoes. Bring to the
boil and cook until soft. Mash with the
milk, then season with pepper.
Mix the
corn flour with the water and Worcestershire
sauce. Stir into the mince mixture until
well distributed. Add the soup, salt and pepper
to the meat mixture. Slowly bring back to the
boil, stirring constantly. Tip mixture into
a large casserole dish.
Top with
the mashed potato. Smooth over the potato
until it is an even depth. Sprinkle on the grated
cheese.
Bake in a
moderate oven for 30 minutes.

| Easy Spaghetti Bolognese 500
gm beef mince
1 onion, chopped
2 cloves garlic, chopped
finely
1 can chopped tomatoes
1 can tomato soup
2 cups frozen vegetables
1 teaspoon of dried basil
1 teaspoon dried oregano
Salt and pepper
500g pasta
Fry the mince in a saucepan.
Add onion and garlic continue cooking for 10
minutes.
Add the remainder of the
ingredients, stir well and cook gently for a
further 15 minutes.
Cook the pasta as per the
directions on the packet.
Stir the pasta into the
sauce or serve the sauce on top of the pasta.

Easy Beef Tacos
1 small onion, finely
chopped
2 cloves garlic, finely chopped
1 tablespoon olive oil
500g beef mince
1 tablespoons chili powder
1 teaspoon paprika
Pinch of salt
Pepper to taste
12 taco shells
1 cup shredded cheese (3 ounces)
1 cup salsa
Chopped tomato and lettuce for toppings
Cook onion
and garlic in oil in large nonstick skillet over
medium heat about 2 minutes or until onion is
tender. Add mince, cook about 5 minutes, breaking
up large pieces, until beef is browned. Add chili
powder, paprika, salt and pepper; heat until hot.
Heat the
taco shells in oven as per packet instructions.
Spoon 2 tablespoons filling into each taco shell.
Top with cheese, salsa, tomatoes and lettuce.

| Crockpot Porcupine
Meatballs 500g lean beef mince
1/2 cup raw rice
1 onion, finely chopped
1 egg
Salt and pepper to taste
2 cans tomato soup
In mixing bowl combine
mince, rice, onion, salt, pepper and egg.
Shape meat mixture into
small meatballs.
Place meatballs in crockpot.
Pour soup over meatballs.
Cover and cook on low
setting for 7 to 8 hours.

| Curried Meatballs 500g mince
1 cup breadcrumbs
1 onion, finely chopped
2 teaspoons curry powder
2 eggs
2 teaspoons freshly chopped
parsley
2 tablespoons of BBQ sauce

Combine all ingredients
& mix thoroughly.
Roll into small meatballs
and fry until cooked through.

| Easy Beef
Chow Mein 500g lean minced beef
1 large
onion, finely chopped
1 teaspoon
finely chopped garlic
1
tablespoon olive oil
1 cup
finely chopped Chinese cabbage
1 carrot,
grated
¼ cup
Kecap manis (sweet soy sauce)
1 teaspoon
Curry powder
1 packet
of 2 minute noodles, cooked
.
Heat
non-sick pan over medium heat. Add oil, lean
minced beef and onion and cook, stirring until
well browned.
Add cabbage and carrot and cook for a further 4 -
5 minutes.
Add kecap manis, curry powder and ½ cup water
and stir to combine.
Add the
noodles and stir.
